Cheesy Pumpkin Chives Spaghetti

One of the fast easy lunch recipes is to prepare this cheesy pumpkin chives spaghetti and my son really loves it to the max. You only need to prepare the pumpkin puree before hand (do the work ONCE and for all), steam it until it softens, scrape off, mash it, store in the ice cube tray and freeze it for up to a month for the convenience of later use.

Hi Jenna, This looks quick and awesome – except for the part about processing the pumpkin from scratch. I was thinking I’d use organic canned pumpkin purée instead and I was wondering what the measurement would be? Any idea? Also like the idea of adding an egg, but what is a green egg? Thanks!

Hi Lu Hall! Thank you for your interest in this quick recipe. Yeah, for sure you can use the organic canned pumpkin puree, it is just that you will be 100% sure of having pure pumpkin when you steam and freeze it yourself for later use, it is just one-time job, but I understand that we want it to be more convenient, so either way that you prefer actually. As for the measurement, some small kids do not like to have the rich taste of pumpkin, so it is totally up to your kid’s liking. I normally put 2 tablespoons in it to cook this spaghetti. Green eggs are organic eggs without antibiotics, probably I should just use “organic” instead of “green”, thank you dear!
